In our true traditional Indian style, the festival season spells sweets, sweets and more sweets. But what is a health conscious person to do in the middle of all this caloric extravaganza? Try this healthy version of home-made, low-fat barfi, which takes just 30 minutes flat to put together.
1 tablespoon canola oil/ rapeseed oil
100 ml low fat milk
2 de seeded green cardamom
2 teaspoon brown sugar
80 gm skimmed milk powder
Take a heavy-base pan and heat 1 tbsp oil in it. Now gently add brown sugar to it.
Stir the sugar continuously, for over 3-5 minutes, until the sugar is fully melted.
Now add the skimmed milk and make sure you are gently stirring it. Now, add the cardamom seeds and mix it well.
Now pour in your milk powder mixture and continue stirring it for another 5 to 7 minutes.
As soon as you observe that the mixture has become stiff and is leaving the sides of the pan, pour the mixture on a grease proof paper and let it stand for a couple of minutes.
Let the mixture cool. Now use a sharp knife and cut the mixture into neat inch squares. Serve!
